As a yoghurt substitute: Mix 1 banana and a handful of frozen raspberries or other berries with 1/2 cup of oat milk in a blender to a smooth mass. Put the finished granola on top, finish with toppings of your choice and voilà, you have a delicious and healthy breakfast in front of you that does not contain any animal products.
Vegan smoked salmon
Vegan smoked salmon is the trend par excellence and is currently offered at all hip cafes in the big city. If you are going to make it yourself at home, you need two things in particular: carrots and smoky taste! Well done, it tastes deceptively real. In addition, the carrots are full of vitamins and minerals and are therefore good for your health. The best? With a little twist, the recipe is also for you if you do not like fish.
Preparation: It is best to use large carrots and cut them into long, thin strips with a vegetable peeler. Now cook the carrots for a few minutes until they are soft. Then add the carrot strips liquid smoke (1 teaspoon to 3 carrots), a little soy sauce, lemon juice, a dab of maple syrup and nori leaves. Just omit the latter if you do not want it to be so “fishy”. Then leave the smoked salmon in an airtight container in the refrigerator for at least one night.
As a base: The vegan salmon tastes best on a bagel with cream cheese. Here, too, it is very easy to find plant-based alternatives based on soy or oats. The selection in the supermarkets is constantly growing. If you want to be creative yourself, you can conjure up a delicious dip from a piece of natural tofu, a clove of garlic and fresh herbs of your choice. Put everything in a blender and season with salt and pepper. Put the salmon on top and garnish with dill.
Vegan scrambled eggs
Do you love delicious scrambled eggs in the morning? So try it as an alternative with vegan variant. In this case, natural tofu is used as an egg substitute, which is ideal if you are on a protein-rich diet and want to manage without animal proteins. So the perfect solution to replace scrambled eggs on the breakfast table.
Preparation: The secret ingredients are Turmeric – for the yellow color – and Kala Namak. The black salt gives the dish a slightly sulfur-like aroma known from eggs. Simply crumble the tofu and mix with some yeast flakes, pepper and paprika powder as needed. Then into the forehead. If you prefer it a little “sloppy”, you can add soy yogurt.
For below below: Wholemeal bread and avocado are suitable as a base here. If you want, you can shake the slice of bread on both sides with a little olive oil in the used pan. This Mediterranean classic is part of any good brunch. But is it also vegan? In fact yes! To make the plant-based cheese substitute, you only need 5 ingredients – namely 2 tablespoons psyllium husk, 100 g cashews, 4 tablespoons yeast flakes and the juice of half a lemon.
Preparation: Soak the flea seeds and cashews in different containers for at least 2 hours. After that, process all the ingredients in a blender to a cheesy mass and season with pepper and salt. Pour into a mozzarella-shaped bowl and cool overnight.
