Christmas is over, but the budding season is far from over. The tasty cabbage bouquets can be harvested well into March. But in contrast to the pre-Christmas period, when Brussels sprouts are cooked or fried as an accompaniment to hearty meals, after the turn of the year there is more focus on lighter dishes with Brussels sprouts. They focus on the actual small bouquets and their many nutrients. And so the delicious winter vegetables can be integrated into various meals – also at breakfast. Ingredients for the Brussels sprouts breakfast with bacon and eggs

For two people you need 400 grams of Brussels sprouts, 8 slices of bacon, 4 eggs, 2 onions, 3 cloves garlic, salt, pepper, olive oil. If you like: nutmeg, cumin (ground), chives.

The recipe for the delicious kale breakfast with fried eggs and bacon

Here’s how it works: First, bring all the ingredients to the size you need for cooking at the end. Finely chop the onion and finely chop the garlic. Then clean the Brussels sprouts by removing the outer leaves and cutting off the woody end of the stem. Make it a little more generous than usual, it will make the next step easier: Now you have to separate the sprouts from each other.

Now heat in a pan on the stove and leave the bacon outside. If you eat vegetarian, you can easily make a meat-free alternative yourself instead of bacon. Here we show you how it is done. The vegan bacon does not need to be fried in the pan. When the bacon is crispy, you can take it out of the pan and drain on paper towels.

Now heat some olive oil in a coated pan, let the eggs slide in (preferably intact) and fry on low to medium heat until fried eggs. The plum should still be flowing and the edges crisp. Feel free to add salt and pepper during the cooking process.

When the eggs are ready, they come out of the pan. In the same pan, fry the onion with a dab of new oil. After two to three minutes, add the garlic and Brussels sprouts. Bake these on low to medium heat for eight to ten minutes, stirring regularly. Season the Brussels sprouts with salt and pepper – and if you prefer something coarser for breakfast, add a pinch of cumin and nutmeg.

Then it can be cooked. Place two of the fried eggs and four of the bacon strips and the fried Brussels sprouts on each plate. Garnish the plate with freshly ground pepper, and if you have it, fresh chives and your delicious breakfast of Brussels sprouts are ready.
