Wash the grapes and dry them gently with a kitchen towel. Grease an 8- or 9-inch springform pan and sprinkle with a little flour to prevent the batter from sticking.

In a bowl, whisk together flour, powdered sugar, baking soda, salt and vanilla powder (optional).

Wash the lemon well and dry it. Grate the skin, cut in half and juice.

In a second bowl, mix together lemon peel, 2 tablespoons lemon juice, plant-based milk and olive oil.

Add the dry ingredients to the wet ingredients and mix quickly to a smooth mixture. Do not stir for too long otherwise the cake will not be fluffy.

Pour the batter into the prepared springform pan and spread the grapes on top.

Bake the grape cake at 175 degrees (top / bottom heat) for about 40 minutes. The cake is finished when a toothpick inserted in the middle comes out clean.

Allow the cake to cool completely on the rack before taking it out and cutting it into slices. Alternatively, you can sprinkle it with powdered sugar before serving.
