The ingredients for fresh rolls
You will need: 500 grams of wheat flour, 1 packet of dry yeast, 350 milliliters of lukewarm water, one and a half teaspoons of salt.
Here’s how it works: Put the flour in a large mixing bowl, add yeast and salt and mix well. Then pour in the lukewarm water and mix with a fork to a coarse dough. It will be very sticky – and that’s normal. Cover the bowl with a clean towel and leave to rise at room temperature for three hours. Then put in the fridge. Now the dough should rest cold for about eight hours.

In the morning, take the dough out of the fridge, place it on the worktop and knead briefly. Divide into eight equal pieces, shape each into a ball and place on a baking tray lined with baking paper, leaving enough space. The texture of the dough is very crumbly – so do not be surprised. Then cut the tops of the rolls into a cross shape and let them rest for another ten minutes.

With this trick, homemade rolls get really crispy
Meanwhile, preheat the oven to 200 degrees. Important: Place a small refractory dish in the bottom of the oven and fill it with water. The steam creates the incredibly crispy crust during frying. Then put the bowls in the oven and bake for about 25 to 30 minutes until golden brown. They taste simply heavenly with salted butter and many toppings. Enjoy the meal!
