… for the puff pastry cake batter:
250 grams flour (Type 405), 1 tablespoon baking powder, 125 grams sugar, 125 grams cold butter, 1 teaspoon vanilla extract, 1 egg (size M)
… to the filling of the apple cake:
5 large apples (eg Boskop) 1 pinch cinnamon, 1 tablespoon lemon juice, 45 grams sugar, 1 teaspoon rum, 70 grams raisins

200 grams of flour (Type 405), 100 grams of sugar, 80 grams of cold butter, 1 pinch of cinnamon, 1 pinch of salt

This is how it is done
For the puff pastry of the apple pie, first mix the flour with the baking powder and sift both together in a bowl. Add sugar to it. Cut the butter into small pieces and mix them into the ingredients. Mix everything thoroughly with your hands.
Finally, mix the vanilla extract with the egg and knead it into the dough, which you then knead briefly on a floured work surface. Then wrap it in foil and put it in the fridge for at least an hour.
Grease a springform pan (diameter: 26 centimeters) thoroughly with butter and sprinkle with a little flour. This ensures that the cake comes out of the mold after baking.
Roll out the dough in a circle on a floured surface. Then keep it in the mold and leave an edge about 4 centimeters high. Be sure to prick the bottom several times with a fork.

Preheat the oven to 180 degrees top and bottom heat (160 degrees convection oven).
To the filling peel and core the apples and cut them into large cubes. Then add cinnamon, lemon juice, sugar, rum and raisins and mix everything. Now spread the apple mixture on the pastry base.

To crumble, put flour, sugar, butter, cinnamon and salt in a bowl and rub between your hands. Spread the resulting crumbs over the apples.
Now put the cake in the oven for 45 minutes and let it bake until it is golden brown. Then it must first be cooled on a rack before you take it out of the mold. To do this, loosen the cake with a knife and turn it out onto a cake pan.
