You will love these easy to make and tasty veggie pizza muffins!
Ingredients for 12 pieces:
2 spring onions
1 pepper (orange)
100 g tomatoes (dried)
3 to 4 sprigs of basil
100 g Gouda or butter cheese
125 grams of flour
125 g spelled flour (whole grain)
2 tsp baking soda
1/2 teaspoon salt
200 ml buttermilk
60 g pine nuts
25 minutes (plus 25 minutes cooking time)
And this is how it is done:
Preheat the oven to 200 ° C top and bottom heat. Line the muffin tins with paper tulips. Wash the spring onion and cut it into fine rings. Wash the paprika, divide it in half, remove the seeds and remove the inner peel. Then cut into small cubes. Roughly chop the sun-dried tomatoes. Cut the basil into strips.
Divide the cheese into cubes. Mix both flours with baking powder and salt in a bowl. Add buttermilk, cheese and eggs and mix until smooth. Stir in peppers, spring onions, basil and tomatoes.
Distribute the batter between the paper cups and sprinkle over the pine nuts. Bake in a hot oven for about 25 minutes. Serve hot or cold.
